    For all our delicious cheese alternatives you need the vegan cheese starter culture to start the fermentation process. For particularly aromatic fine mold varieties, such as Camembert or Brie, you need a white mold culture: the Candidum starter culture. Of course, everything is organic and without preservatives. For the exact dosage you get a practical measuring spoon.

  2. Transglutaminase

    The name may sound complicated, but the function of transglutaminase is quite simple: this enzyme combines proteins and your vegan cheese gains firmness with it. It works the same way the rennet enzyme works to coagulate animal milk in traditional cheese making. The difference is that transglutaminase is vegan, while rennet is mostly of animal origin.
