Miso - also called the "brown butter of Japan", is a traditional preparation of rice and a special fermentation culture: the Koji mushroom.

Miso paste has many uses in Asian and macrobiotic cuisine. But especially as a seasoning, for dressings, sauces and marinades. And of course as a base for soups and broths, as in miso soup.

Our misos are no ordinary seasoning pastes. Because miso, like other fermented foods, is particularly digestible and promotes our intestinal health.

It provides abundant vegan proteins and fermentation produces lactic acid bacteria and enzymes that support and stimulate digestion.

Among others, it contains: Vitamin B2 and E, isoflavones, lecithin, choline and some essential amino acids.

Our misos are of course unpasteurized and therefore still 100% alive.

The tasting mix contains our three favorite varieties. The red Aka Tsubu Miso is spicy and strong in taste. It is clearly different from the more mild miso due to the long fermentation. It is particularly aromatic and slightly saltier. Fairment Shiro Koshi Miso, on the other hand, matures for only about three months, so it tastes particularly mild and sweet - a good introduction to the world of miso. Genmai Miso matures longer and has a stronger taste. It is the most widely used miso in Japanese cuisine.
